Ingredients
1. 4 cups peas 2. 1/4 cup sliced radishes 3. 2 Tbsp fresh chives or basil 4. 2 Tbsp shaved Parmesan |
5. 1.05 Tbsp fresh lemon juice 6. 1.05 Tbsp extra virgin olive oil 7. Salt and pepper to taste |

Method:
Cook 4 cups frozen or fresh peas in salted boiling water in medium saucepan until tender, 3 to 6 minutes. Drain in colander and immediately rinse with cold water until cool.
2. Toss peas with 1/4 cup sliced radishes, 2 Tbsp fresh chives or basil, 2 Tbsp shaved Parmesan, and 1.05 Tbsp each fresh lemon juice and extra virgin olive oil.
3. Season to taste with salt and pepper.
